Chicken souvlaki salads

Made a whole bunch of these for me and the wife for the week. Really tasty. Got some homemade Greek style salad dressing and taziki sauce and sliced up some pita bread but they’re not in the photos

Naan bread

I bought this bread in the store. It’s not anything as close to fresh made but it’s still pretty damn good. I rubbed it with olive oil and threw on some fresh tomato, red onion and fresh mozzarella. Of course just a little sea salt and crushed red pepper as well. Threw it in the toaster oven for about 15 minutes. It was a terrific lunch

Mother's Day 2016

Found more pics stowed away in the cloud. Steak teriyaki, carmelized endive, bacon wrapped asparagus, salmon on cedar planks, meat and cheese boards - and a nice salad to start is all off.

sliders for my sons

My little guy doesn't like cheese. Can't figure this kid.

BLT on the grill

I like making bacon on the wire rack like this. It's easy and less clean up. I also like my bread toasted this way... just over the direct heat for a few seconds.

These photos were from 2015. I cannot remember the holiday but I made these for some occasion. The antipasto skewers were great and the ciabatta with goat cheese and roasted peppers also a hit

Salmon and shrimp

I grilled up some asparagus but it's not in the pictures. Anyway, I made a nice crust on the salmon with Panko breadcrumbs, regular breadcrumbs and a whole bunch of spices.

I think the shrimp was my favorite. I just grilled them in a cast-iron pan. I put a little lemon juice on them and then coated them with a barbecue rub. Into the pan with some butter and they came out fantastic

BBQ/braised ribs

This was different but super easy and really great. I took a bunch of seasoning and sauces along with 2 bottles of beer and chopped onion and threw a rack of ribs that I segmented into thirds and slowly braised them in the Dutch oven till super tender but not quite falling off the bone. Then I put them over the coals and glazed with BBQ sauce. I have to say - these were excellent.

Elk kebabs

Took some elk stew meat and marinated overnight. Skewered them up and grilled them on my old trusty kebab grill. The sides were equally awesome.

Spinach and tomato frittata

This was awesome. Whipped up 8 eggs and a splash of milk. Added sautéed spinach, sea salt, sumac and halves cherry tomatoes. Pan fried in a 10" pan on stovetop on medium for a few minutes. Then into the oven on broil... not too close to the top of the oven. It browned up a bit and I removed from oven. I sliced them into quarters and let cool. The next day I added mild cheddar to the top and tossed them into the toaster oven. Delicious.
