Fourth of July
Took the family fishing on the 4th. Grilled up some porterhouse steaks when we got home. They were perfectly cooked medium rare

Bacon wrapped pork loin
This was pretty good. I cooked it in the smoker but finished it off on a cast iron grill plate so the bacon would crisp a little more.
Also smoked some veal shanks with it. I had them left over from Mother's Day sitting in the freezer. Personally, I won't smoke them anymore. I will stick to braising them in a cast-iron Dutch oven.
The family loved the bacon wrapped pork loin. A couple of my sons friends stayed for dinner and they seem to enjoy it also.
Had some leftover bacon so I made some caramelized endives sprinkled with crumbled bacon. It was delicious.

Memorial Day 2017
Cooked at my brother in laws house. Dogs, burgers, little chicken wings, and pork loin country style. Plenty of corn on the cob too. That's me in my ever-so-cool Motörhead apron.

Mother's Day cooking
I cooked up some good stuff again this year. Prosciutto wrapped Bosc pears grilled in the cast iron with some Maldon salt and pepper

Books from The Ginger Pig
These books are awesome. Tim Wilson is a genius. These are packed with tons of information about raising animals, farm life and of course cooking. Highly recommended
Oven roasted pork belly over vegetables
This recipe was loosely based on a recipe from the ginger pig meat book. This cooked slowly for about six hours. Delicious and very inexpensive.

Moroccan cigars
Purchased from tavlin market, Bellmore Long Island. Minced meat inside a tasty dough. Delicious. The kids loved them as an after school snack.

Bacon on a wire rack
This is a really great way to cook bacon. You don't get all the splatter on the stove top. You need a baking sheet and a wire rack. Preheat the oven to 400°F and put the bacon on the middle rack. This was a very thick cut bacon so it took about 20 or 30 minutes to fully cook.
